The two-minute roti that stays soft till dinner
A slower chakki grind, a hotter tawa, and the small habits that keep phulkas soft hours later.

A good phulka is not luck. It is wheat that still has its bran and germ, dough that has rested, and a tawa hot enough that the first side sets in seconds.
We start with choice wheat — graded for protein and moisture — then grind it slow on a chakki so the flour stays cool. Heat is the enemy of aroma. Speed is the enemy of softness.
When the dough is rolled thin and the second side hits the flame, the steam trapped inside is what makes it puff. Seal the cooked rotis in a cloth while they are still warm. They will still fold at dinner.
